- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the granulated sugar, cocoa powder, and softened butter until the mixture is light and fluffy.
- Beat in the large egg and the vanilla extract until combined.
- In another bowl, whisk together the baking soda, salt, and all-purpose flour. Gradually add this mixture to the wet ingredients, stirring until just combined.
- Scoop out tablespoon-sized amounts of dough, roll them into balls, and roll them in sugar to coat.
- Arrange the dough balls on a lined baking tray, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes.
- Remove the cookies from the oven and immediately press a chocolate kiss into the center of each cookie.
- Allow them to cool slightly before transferring to a wire rack to cool completely.
Notes
To ensure the cookies turn out perfectly: consider using flavored butter or different chocolate candies for topping; keep a watch on baking time; if the dough is too sticky, refrigerate for 15 minutes before forming balls. Store in an airtight container at room temperature for up to a week, or freeze for up to 3 months.
