Ingredients
  

For the Shrimp Marinade
  • 1 pound medium shrimp, peeled and deveined Use wild-caught for better flavor.
  • 2 tablespoons olive oil
  • 1 tablespoon lime, juiced and zested
  • 1-2 tablespoons chipotle pepper in adobo sauce Adjust to your heat preference.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
For the Bowl
  • 2 cups cooked rice (white, brown, or cauliflower rice) As base for the bowl.
  • 1 cup shredded red cabbage For crunch and color.
  • 1 ripe avocado, sliced
  • to taste Fresh cilantro for garnish

Method
 

Marinate the Shrimp
  1. In a bowl, combine the olive oil, lime juice, lime zest, chipotle pepper, garlic powder, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for 15 minutes to absorb flavors.
Cook the Shrimp
  1. Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes per side or until they turn pink and opaque.
Prepare the Bowl
  1. While the shrimp cooks, get the rice ready and layer it at the bottom of your bowls.
Assemble the Dish
  1. Top the rice with cooked shrimp, shredded cabbage, and avocado slices. If you’d like, drizzle more lime juice over everything and garnish with fresh cilantro.
