Burrito Ingredients
  • 4 large large flour tortillas
  • 2 cups cooked rice (white or brown)
  • 1 can black beans, drained and rinsed
  • 1 cup corn (frozen or fresh)
  • 1 cup cooked chicken or beef (optional) Use cooked and shredded chicken or beef.
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 teaspoon cumin
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the Rice: Begin with cooking your rice according to the package instructions. Season it lightly with salt.
  2. Prepare the Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, cooked chicken or beef (if using), cheese, salsa, cumin, salt, and pepper. Mix well until everything is evenly distributed.
  3. Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling onto the center of the tortilla. Fold in the sides, then roll it up from the bottom, tucking it in tightly as you go.
  4. Wrap for Freezing: Once rolled, wrap the burrito tightly in plastic wrap, then place it in a freezer-safe bag for easy storage. Repeat with the remaining tortillas and filling.
  5. Freeze: Lay the wrapped burritos flat in the freezer. They can be kept for up to 3 months.
  6. Reheat: When you’re ready to enjoy, unwrap the burrito and place it on a microwave-safe plate. Heat it in the microwave for about 2-3 minutes or until warmed through. For a crispy exterior, you can also reheat it in a pan over medium heat.

Notes

Feel free to swap out beans, add sautéed vegetables, or opt for a different type of shredded cheese to suit your taste. Ensure that your fillings are at room temperature before assembling to prevent a soggy burrito.
