- Cook the Rice: Begin with cooking your rice according to the package instructions. Season it lightly with salt.
- Prepare the Filling: In a large mixing bowl, combine the cooked rice, black beans, corn, cooked chicken or beef (if using), cheese, salsa, cumin, salt, and pepper. Mix well until everything is evenly distributed.
- Assemble the Burritos: Lay a tortilla flat on a clean surface. Spoon a generous amount of the filling onto the center of the tortilla. Fold in the sides, then roll it up from the bottom, tucking it in tightly as you go.
- Wrap for Freezing: Once rolled, wrap the burrito tightly in plastic wrap, then place it in a freezer-safe bag for easy storage. Repeat with the remaining tortillas and filling.
- Freeze: Lay the wrapped burritos flat in the freezer. They can be kept for up to 3 months.
- Reheat: When you’re ready to enjoy, unwrap the burrito and place it on a microwave-safe plate. Heat it in the microwave for about 2-3 minutes or until warmed through. For a crispy exterior, you can also reheat it in a pan over medium heat.
Notes
Feel free to swap out beans, add sautéed vegetables, or opt for a different type of shredded cheese to suit your taste. Ensure that your fillings are at room temperature before assembling to prevent a soggy burrito.
