- In a mixing bowl, combine the chickpea flour and salt. Gradually whisk in the water to create a smooth batter. If you’re feeling adventurous, add your chosen spices at this stage for an extra kick of flavor!
Cooking
- Heat a non-stick skillet over medium heat, adding the olive oil. Once hot, pour the chickpea batter into the skillet and spread it into an even layer.
- Allow it to cook for about 10-15 minutes until the edges start to lift and the surface looks firm. Optionally, you can place a lid on top to help it cook evenly.
- Carefully flip the chickpea tofu using a spatula, and cook for another 5-10 minutes until both sides are golden brown and crispy.
Finishing
- Let the tofu cool slightly before cutting it into cubes or slices, depending on your desired presentation.
Notes
For a firmer chickpea tofu, let the batter rest for 10 minutes before cooking. Ensure your skillet is well-oiled to prevent sticking. You can store leftovers in the refrigerator for up to 3 days, or freeze for about a month.
