Preparation
- In a mixing bowl, combine the chickpea flour and salt. Gradually whisk in the water until the mixture is smooth without lumps. You can add in any fresh herbs or spices at this stage for extra flavor.
- Let the batter sit at room temperature for about 30 minutes to allow the chickpea flour to hydrate.
Cooking
- Heat a non-stick skillet or a cast-iron pan over medium heat and add one tablespoon of olive oil.
- Pour around 1/2 cup of the batter into the pan, spreading it out gently to form a round flatbread. Cook for about 3-4 minutes until the edges start to lift and the surface becomes set.
- Carefully flip the flatbread and cook for an additional 3-4 minutes on the other side until golden brown.
- Add more oil if necessary and repeat the process with the remaining batter.

Notes
If out of chickpea flour, you can substitute it with lentil flour. Watch closely while cooking to avoid overcooking or undercooking. Store leftover batter in the fridge for up to 2 days.
