  • 1 pound ground chicken You can substitute with ground turkey or plant-based protein.
  • 2 medium zucchinis, grated Make sure to squeeze out excess moisture.
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • Oil for frying Enough to cover the bottom of the pan about 1/4 inch deep.

  1. Start by grating the zucchinis. After grating, place them in a clean kitchen towel and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until just combined.
  3. In a frying pan, pour in enough oil to cover the bottom—about 1/4 inch deep. Heat over medium heat until the oil is hot but not smoking.
  4. Using your hands, take a small handful of the mixture and form patties about 1/2 inch thick. Carefully place them in the hot oil, making sure not to overcrowd the pan.
  5. Cook the fritters for about 3-4 minutes on each side or until they are golden brown. Once done, transfer them to a paper towel-lined plate to absorb any excess oil.

Notes

For best results, ensure your oil is hot before adding the fritters to avoid them soaking up too much oil. Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. To reheat, place in the oven at 350°F (175°C) for about 10-15 minutes.
