- Start by grating the zucchinis. After grating, place them in a clean kitchen towel and squeeze out excess moisture.
- In a large mixing bowl, combine the grated zucchini, ground chicken, breadcrumbs, grated Parmesan cheese, egg, minced garlic, salt, black pepper, and Italian seasoning. Mix until just combined.
- In a frying pan, pour in enough oil to cover the bottom—about 1/4 inch deep. Heat over medium heat until the oil is hot but not smoking.
- Using your hands, take a small handful of the mixture and form patties about 1/2 inch thick. Carefully place them in the hot oil, making sure not to overcrowd the pan.
- Cook the fritters for about 3-4 minutes on each side or until they are golden brown. Once done, transfer them to a paper towel-lined plate to absorb any excess oil.
