  • 1 pound ground chicken Use lean ground chicken for best results.
  • 1 cup grated zucchini Make sure to squeeze out excess moisture.
  • 1 cup fresh corn kernels You can use frozen corn, thawed.
  • 1/4 cup breadcrumbs Use plain or seasoned breadcrumbs.
  • 1/4 cup finely chopped onion Any onion variety works.
  • 1 large egg Acts as a binder for the ingredients.
  • 1 teaspoon garlic powder Or use fresh minced garlic.
  • to taste none Salt and pepper Adjust according to preference.
  • 2 tablespoons olive oil For cooking the burgers.
  • as needed none Burger buns Optional, for serving.
  • as needed none Toppings (lettuce, tomato, etc.) Customize with your favorite toppings.

Method
 

Preparation
  1. Start by grating the zucchini and chopping the onion. If using fresh corn, cut the kernels off the cob.
Mixing
  1. In a large bowl, combine ground chicken, grated zucchini, corn kernels, breadcrumbs, chopped onion, egg, garlic powder, salt, and pepper. Mix gently until cohesive.
Shaping
  1. Divide the mixture into equal portions and shape into patties, about 1-inch thick.
Cooking
  1. In a non-stick skillet, heat olive oil over medium heat.
  2. Add patties to the skillet and cook for 5-7 minutes on each side, or until internal temperature reaches 165°F (75°C) and they're golden brown.
Assembly
  1. Toast burger buns if using, place cooked patties on buns, and top with desired toppings.

Notes

These burgers can be made with ground turkey as a meat alternative. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
