Preparation
- Start by grating the zucchini and chopping the onion. If using fresh corn, cut the kernels off the cob.
Mixing
- In a large bowl, combine ground chicken, grated zucchini, corn kernels, breadcrumbs, chopped onion, egg, garlic powder, salt, and pepper. Mix gently until cohesive.
Shaping
- Divide the mixture into equal portions and shape into patties, about 1-inch thick.
Cooking
- In a non-stick skillet, heat olive oil over medium heat.
- Add patties to the skillet and cook for 5-7 minutes on each side, or until internal temperature reaches 165°F (75°C) and they're golden brown.
Assembly
- Toast burger buns if using, place cooked patties on buns, and top with desired toppings.
Notes
These burgers can be made with ground turkey as a meat alternative. Store leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
