  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon dried herbs Thyme or oregano work well

Method
 

Preparation
  1. Gather all your ingredients and measure them out for a smoother process.
  2. In a medium bowl, combine olive oil, soy sauce, lemon juice, minced garlic, paprika, black pepper, salt, and dried herbs. Stir well into a fragrant marinade.
Marinating
  1. Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring it's evenly coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, ideally 4 hours or overnight.
Cooking
  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper or a greased rack.
  2. After marinating, place the chicken skin-side up on the baking sheet.
  3. Bake for 35-40 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown and crispy.
Serving
  1. Let the chicken rest for a few minutes before serving to allow the juices to redistribute. Serve hot with your preferred sides.

Notes

For substitutions, chicken thighs can be swapped for drumsticks or boneless skinless breasts. Ensure proper marinating time for flavors to develop fully. Store leftovers in an airtight container in the refrigerator for up to 3 days.
