Ingredients
  

For the Filling
  • 2 cups cooked chicken, shredded (grilled or rotisserie)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon taco seasoning
For the Taquitos
  • 8 small corn tortillas Warm them for easy rolling.
  • as needed Cooking spray or a little oil for brushing
Optional Toppings
  • as desired avocado, salsa, cilantro, sour cream, lime slices Use your favorites!

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) to ensure nice crispiness.
  2. In a mixing bowl, combine shredded chicken, cheese, and taco seasoning. Mix until well-coated.
  3. Lightly warm the tortillas in a skillet or microwave for a few seconds to make them pliable.
Assembly
  1. Place a few tablespoons of the chicken mixture at one end of a tortilla and roll tightly. Repeat for all tortillas.
Baking
  1. Place rolled taquitos seam-side down on a baking sheet. Lightly spray or brush with oil.
  2. Bake for 15-20 minutes until golden brown.
Serving
  1. Remove from the oven and let cool slightly before serving with your favorite toppings.

Notes

Warm tortillas are easier to roll and will not crack. Try various fillings like beans or roasted veggies for a vegetarian option. Broil taquitos for a few minutes if they aren't crispy enough after baking.
