Chicken Taco Casserole

Ingredients
  

Main Ingredients
  • 2 cups cooked chicken, shredded or diced Use rotisserie chicken for a quicker option
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn, frozen, canned, or fresh
  • 1 cup salsa Your favorite variety
  • 1 teaspoon taco seasoning
  • 1.5 cups shredded cheese Cheddar or a taco blend
  • 2 cups tortilla chips, coarsely crushed
Optional Toppings
  • to taste sour cream
  • to taste guacamole
  • to taste diced tomatoes
  • to taste jalapeños

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, salsa, and taco seasoning. Mix well until all ingredients are evenly distributed.
Layering
  1. In a greased 9x13 inch baking dish, spread half of the crushed tortilla chips evenly on the bottom.
  2. Pour half of the chicken mixture over the chips, and sprinkle with half of the cheese.
  3. Add another layer of the crushed tortilla chips, followed by the remaining chicken mixture and top it off with the remaining cheese.
Baking
  1. Place the casserole in the oven and bake for 20-25 minutes, or until the cheese is bubbly and melted.
  2. Let the casserole cool for a few minutes before serving.
  3. Top with your favorite toppings, and enjoy!

Notes

To maintain the crispness of the chips, add them to the casserole just before baking rather than layering them in between. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2 months.
