  • 500 g Aiguillettes de poulet (chicken strips)
  • 200 ml Crème fraîche (fresh cream)
  • 100 g Parmesan cheese, grated
  • 2 cloves Garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons Olive oil
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Start by rinsing the chicken strips and patting them dry with a paper towel.
  2. Season the chicken with salt and pepper on both sides. Set aside.
  3. In a shallow bowl, mix the flour (if using) with salt and pepper. Dredge the chicken pieces in this mixture, ensuring they are well-coated.
Cooking
  1. Heat olive oil in a large frying pan over medium heat.
  2. Once the oil is hot, carefully add the chicken strips. Fry them for about 4-5 minutes on each side, or until golden brown and cooked through.
  3. Remove them from the pan and set aside on a paper towel-lined plate.
Making the Sauce
  1. In the same pan, add minced garlic and sauté for about 30 seconds until fragrant.
  2. Add the crème fraîche, stirring well. Once heated, stir in the grated Parmesan cheese until the sauce is creamy and smooth.
Finishing Touches
  1. Add the fried chicken strips back to the pan, tossing them gently in the sauce to coat evenly.
  2. Plate your chicken strips and garnish with freshly chopped parsley.

Notes

For a twist, substitute Greek yogurt for crème fraîche. Ensure oil is hot before adding chicken to avoid soggy strips. Don't overcrowd the pan.
