  • 2 packets ramen noodles You can use instant ramen noodles as well.
  • 1 lb chicken breast, sliced Can substitute with tofu or shrimp.
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil For cooking.
  • 2 cups mixed vegetables (like bell peppers, carrots, and broccoli) Feel free to choose your favorite vegetables.
  • 2 green onions, chopped For garnish.
  • 1 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste Do not forget to season the noodle mixture.

Cooking Steps
  1. Boil a pot of water and cook the ramen noodles until just tender, about 3 minutes. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat.
  3. Add the sliced chicken breast to the skillet, season with salt and pepper, and cook for about 5-7 minutes until cooked through and browned.
  4. Toss in the minced garlic and ginger, stirring for 1-2 minutes until fragrant.
  5. Add the mixed vegetables and cook for an additional 3-4 minutes, allowing them to soften while maintaining a crunch.
  6. Toss in the cooked ramen with the chicken and vegetables, drizzle the soy sauce over the mixture, and stir well to coat everything evenly.
  7. Finish by adding the chopped green onions, giving it one last toss before removing from heat.
  8. Plate your Chicken Ramen Stir Fry and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can freeze for up to a month. Reheat by stir-frying or microwaving in short intervals.
