  • 1 package (16 oz) gnocchi
  • 1 tablespoon olive oil For sautéing.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups chicken broth Use low-sodium if preferred.
  • 2 cups spinach Fresh spinach recommended.
  • 1 cup heavy cream Can substitute with coconut milk for a lighter version.
  • Salt and pepper to taste Adjust as needed depending on the broth.
  • Parmesan cheese for serving

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until the onions have softened, about 3-4 minutes.
  2. Toss in the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the chicken broth and bring to a gentle simmer.
Cooking
  1. Once simmering, add the cooked chicken and gnocchi. Allow it to cook for about 5 minutes, or until the gnocchi floats to the top.
  2. Next, add the heavy cream and stir in the fresh spinach. Season with salt and pepper to taste. Cook for another 2-3 minutes until the spinach wilts and the soup is heated through.
  3. Ladle the Chicken Gnocchi Soup into bowls, finishing with a sprinkle of Parmesan cheese for a touch of decadence.

Notes

This soup is perfect for meal prep! Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, consider saving the gnocchi separately to maintain texture. Reheat on the stovetop over low heat.
