Preparation
- Start by dicing the onion, carrots, and celery. Mince the garlic.
- Cut the chicken breast into bite-sized pieces.
Cooking
- In a large pot, heat the olive oil over medium heat.
- Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.
- Pour in the chicken broth and add the cooked chicken and dried thyme. Bring it to a gentle boil.
- Add the gnocchi to the pot and cook according to the package instructions, usually around 3-5 minutes, until they float to the top.
- Stir in the spinach and let it wilt in the hot soup.
- Taste and season with salt and pepper to your liking. Serve hot, topped with Parmesan cheese if desired.
Notes
You can use shredded rotisserie chicken for a quicker version. Avoid adding salt too early, and taste the broth before seasoning. Leftovers store well in the fridge for up to 3 days.
