  • 2 pieces boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper. Pound them for even thickness if desired.
Cooking the Chicken
  1. Heat a drizzle of olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts, cooking each side for about 5-7 minutes until golden and cooked through. Remove and set aside.
Making the Sauce
  1. In the same skillet, add more olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant.
  2. Pour in the heavy cream and bring to a gentle simmer.
Adding Spinach and Parmesan
  1. Add the fresh spinach to the skillet and allow it to wilt for a couple of minutes.
  2. Stir in the grated Parmesan cheese until melted and well-combined. Season with additional salt and pepper if necessary.
Combining Everything
  1. Return the chicken to the skillet, coating it in the creamy sauce. Let it simmer for another minute to meld the flavors.
Serving
  1. Plate the chicken and generously spoon over the creamy spinach sauce. Best served hot!

Notes

For substitutions, consider using Halal-friendly chicken or turkey. For a lighter version, replace heavy cream with yogurt and low-fat milk.
