Preparation
- Season the chicken breasts with salt and pepper. Pound them for even thickness if desired.
Cooking the Chicken
- Heat a drizzle of olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts, cooking each side for about 5-7 minutes until golden and cooked through. Remove and set aside.
Making the Sauce
- In the same skillet, add more olive oil if needed and sauté the minced garlic for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a gentle simmer.
Adding Spinach and Parmesan
- Add the fresh spinach to the skillet and allow it to wilt for a couple of minutes.
- Stir in the grated Parmesan cheese until melted and well-combined. Season with additional salt and pepper if necessary.
Combining Everything
- Return the chicken to the skillet, coating it in the creamy sauce. Let it simmer for another minute to meld the flavors.
Serving
- Plate the chicken and generously spoon over the creamy spinach sauce. Best served hot!
