Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded or diced Use leftover rotisserie chicken for convenience.
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
Dumpling Batter
  • 1 cup self-rising flour Can add herbs or cheese for extra flavor.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13-inch baking dish with butter or non-stick spray.
  3. In a bowl, combine cream of chicken soup, chicken broth, and milk. Stir until smooth, then add chicken and mixed vegetables. Season with garlic powder, salt, and pepper.
  4. Pour the chicken mixture into the prepared baking dish, spreading it evenly.
  5. In another bowl, mix self-rising flour with melted butter until it resembles coarse crumbs.
  6. Spoon the dumpling mixture over the chicken mixture but do not entirely cover it.
Baking
  1. Bake the casserole for about 25-30 minutes or until dumplings are golden brown and cooked through.
Serving
  1. Allow to cool slightly before serving. Best enjoyed warm.

Notes

Leftovers can be stored in the fridge for up to 3 days. For freezing, use freezer-safe containers. Reheat in the oven at 350°F (175°C) for 20-25 minutes.
