Ingredients
  

Noodles
  • 8 oz chow mein noodles (or egg noodles)
Main Ingredients
  • 2 tablespoons vegetable oil Divided for cooking
  • 1 pound boneless, skinless chicken breasts (sliced thin)
  • 2 cloves garlic (minced)
  • 1 cup shredded carrots
  • 1 cup bell pepper strips (red, green, or both)
  • 1 cup broccoli florets
  • ¼ cup green onions (chopped) For garnish
Sauce
  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce (or a vegetarian substitute)
  • 1 tablespoon sesame oil
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon cornstarch (mixed with 2 tablespoons cold water)

Method
 

Cooking Noodles
  1. Start by boiling the chow mein noodles according to the package instructions. Once cooked, drain and set them aside.
Sautéing Chicken
  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and cook until it’s browned and cooked through (approximately 5-7 minutes). Once done, remove the chicken from the skillet and set it aside.
Adding Aromatics
  1. In the same skillet, add the remaining oil and toss in the minced garlic. Stir for about a minute until fragrant—be careful not to burn it!
Combining Vegetables
  1. Add in the shredded carrots, bell peppers, and broccoli. Stir-fry these veggies for about 3-5 minutes until they are just tender yet still crisp.
Mixing Chicken and Vegetables
  1. Return the cooked chicken to the skillet and stir to combine with the vegetables.
Preparing Sauce
  1. In a small bowl, mix soy sauce, oyster sauce, sesame oil, black pepper, and the cornstarch mixture. Pour this sauce over the chicken and vegetables, tossing everything together until well-coated and heated through.
Finishing the Dish
  1. Fold in the cooked noodles and continue to stir-fry for another 2-3 minutes until everything is well combined, and the noodles are heated.
  2. Remove the skillet from heat, sprinkle with chopped green onions, serve hot, and enjoy!

Notes

Feel free to swap out veggies based on your preferences or what's in season. Common substitutions include snow peas, bean sprouts, or zucchini. If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days.
