- Start by washing and chopping the romaine lettuce. Make sure to spin it dry in a salad spinner to eliminate excess water.
- Heat your grill pan over medium-high heat. Drizzle a little olive oil and then add the chicken breasts. Season with black pepper and grill for approximately 5-7 minutes on each side or until fully cooked. Once done, remove and allow to rest for a few minutes before slicing.
- In a large mixing bowl, combine the chopped romaine, sliced chicken, and croutons.
- Pour the Caesar dressing over the salad mixture, ensuring everything is evenly coated.
- Add the freshly grated parmesan cheese on top, toss gently, and serve immediately.
Notes
Substitutions: Grilled chicken can be replaced with grilled shrimp or chickpeas for a vegetarian twist. Grill your chicken a day ahead to speed up meal prep. Be careful not to overdress your salad; a little dressing goes a long way.
