  • 8 oz rotini pasta (or any pasta of your choice) Use any preferred pasta type.
  • 2 cups cooked chicken, shredded Grilled or roasted chicken is ideal.
  • 1 cup romaine lettuce, chopped Ensure freshness for optimal crunch.
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Caesar dressing (halal-compliant) Use a preferred brand.
  • Salt and pepper, to taste
  • Croutons for topping (optional) Highly recommended for added texture!

Method
 

Preparation
  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package directions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. If not pre-cooked, season and grill or roast the chicken. Once done, shred it into bite-sized pieces.
  3. In a large mixing bowl, combine the cooked rotini pasta, shredded chicken, chopped romaine lettuce, halved cherry tomatoes, and grated Parmesan cheese.
  4. Pour the Caesar dressing into the bowl and stir gently until all ingredients are well coated.
  5. Taste the salad and season with additional salt and pepper, if necessary.
  6. Serve immediately or refrigerate for at least 30 minutes to meld flavors. Top with croutons before serving.

Notes

For variations, substitute rotini with penne or use grilled shrimp or chickpeas instead of chicken. Store leftovers in an airtight container, best consumed within 3 days.
