  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika smoked for extra depth
  • 1 tablespoon olive oil

Preparation
  1. In a large mixing bowl, combine the ground chicken with salt, black pepper, garlic powder, onion powder, dried sage, dried thyme, and paprika. Use your hands to mix the ingredients thoroughly until well combined.
  2. Form the mixture into sausage patties roughly ½ inch thick. You can make them smaller if you prefer bite-sized pieces.
Cooking
  1. In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, it’s time to cook!
  2. Place the sausage patties in the skillet, leaving space between each one to ensure they cook evenly. Cook for about 5-6 minutes on one side until golden brown.
  3. Flip the patties and continue to cook for another 5-6 minutes or until they reach an internal temperature of 165°F (75°C). This ensures they’re cooked through and safe to eat.
  4. Once done, transfer the chicken breakfast sausages to a plate lined with paper towels to absorb any excess oil. Serve warm with your favorite breakfast sides!

Notes

Customize spices to your liking, avoid overmixing for a better texture, maintain uniform patty sizes, and cook over medium heat to prevent burning.
