Preparation
- Gather your ingredients and set them on a clean surface. If you haven’t already, cook your chicken and shred it for easy mixing.
- In a medium bowl, mash the ripe avocado with a fork. Add a pinch of salt and pepper to elevate flavor.
- Add the shredded chicken to the mashed avocado. Fold them together gently until the chicken is well-coated.
Assembly and Grilling
- Take one slice of bread and spread the chicken-avocado mixture onto it, followed by a generous sprinkle of shredded cheese. Top with the second slice of bread.
- Heat a skillet over medium heat. Add some butter or olive oil, then carefully place your sandwich in the pan.
- Grill for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is fully melted.
- Once done, remove from the heat and slice the sandwich in half. Enjoy while it’s warm.
Notes
For substitutions, hummus can replace avocado for a rich texture. For a vegan option, replace chicken with grilled mushrooms or zucchini. Avoid overstuffing the sandwich to ensure even grilling. Store leftovers in an airtight container; they last about 2-3 days.
