Preparation
- Season the chicken pieces with salt, pepper, and Italian seasoning.
- In a large skillet, heat the olive oil over medium heat.
Cooking
- Add the seasoned chicken to the skillet and sauté for about 5-7 minutes, until golden brown and cooked through.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced mushrooms and cook for about 3-4 minutes until browned.
- Add the minced garlic and sauté for another minute until fragrant.
- Lower the heat and pour in the heavy cream, stirring well to combine with the mushrooms and garlic. Let it simmer for about 3 minutes until slightly thickened.
- Stir in the fresh spinach, allowing it to wilt, and then add the cooked chicken back into the skillet. Mix everything well to combine and heat through.
Serving
- Taste for seasoning, adjusting salt and pepper as necessary.
- Serve hot, garnished with parsley if desired.
