  • 2 pieces boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 cups fresh spinach, washed and drained
  • 1 cup mushrooms, sliced (cremini or white button)
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional) For extra flavor
  • Freshly chopped parsley (optional, for garnish)

Method
 

Preparation
  1. Season the chicken pieces with salt, pepper, and Italian seasoning.
  2. In a large skillet, heat the olive oil over medium heat.
Cooking
  1. Add the seasoned chicken to the skillet and sauté for about 5-7 minutes, until golden brown and cooked through.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced mushrooms and cook for about 3-4 minutes until browned.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Lower the heat and pour in the heavy cream, stirring well to combine with the mushrooms and garlic. Let it simmer for about 3 minutes until slightly thickened.
  6. Stir in the fresh spinach, allowing it to wilt, and then add the cooked chicken back into the skillet. Mix everything well to combine and heat through.
Serving
  1. Taste for seasoning, adjusting salt and pepper as necessary.
  2. Serve hot, garnished with parsley if desired.

Notes

Use fresh ingredients for the best flavor. Store leftovers in an airtight container; may be refrigerated for up to 3 days and frozen for a month.
