  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 cup cooked rice or pasta
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon Italian seasoning

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, cooking for about 3-5 minutes until softened and fragrant.
  3. In a large mixing bowl, combine the shredded chicken, sautéed onion and garlic, chopped spinach, softened cream cheese, cooked rice or pasta, and seasonings. Mix until well incorporated.
  4. Grease a casserole dish lightly with cooking spray or oil. Transfer the mixture into the dish, spreading it evenly.
  5. Sprinkle the shredded cheese on top of the casserole before baking.
  6. Place the dish in the preheated oven and bake for about 25-30 minutes or until the cheese is bubbly and golden.
  7. Let it cool for a few minutes before serving to avoid burning your tongue. Enjoy!
