Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, heat a splash of oil over medium heat. Add the chopped onions and minced garlic, cooking for about 3-5 minutes until softened and fragrant.
- In a large mixing bowl, combine the shredded chicken, sautéed onion and garlic, chopped spinach, softened cream cheese, cooked rice or pasta, and seasonings. Mix until well incorporated.
- Grease a casserole dish lightly with cooking spray or oil. Transfer the mixture into the dish, spreading it evenly.
- Sprinkle the shredded cheese on top of the casserole before baking.
- Place the dish in the preheated oven and bake for about 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving to avoid burning your tongue. Enjoy!
