  • 2 pieces chicken breasts (boneless and skinless)
  • 4 pieces medium-sized potatoes (cut into cubes)
  • 3 tablespoons olive oil divided use
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper adjust to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or fresh, if available

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, combine the cubed potatoes with 2 tablespoons of olive oil, salt, pepper, garlic powder, and rosemary. Mix well to coat evenly.
Roasting
  1. Spread the seasoned potatoes on a baking sheet lined with parchment paper in a single layer and roast for about 25 to 30 minutes, flipping halfway through until golden and crispy.
Cooking Chicken
  1. While the potatoes are roasting, season the chicken breasts with the remaining olive oil, salt, pepper, and garlic powder.
  2. In a skillet over medium heat, heat some olive oil and add the chicken breasts, cooking for about 6-7 minutes on each side or until fully cooked and golden brown.
Serving
  1. Slice the chicken breast and serve it over the crispy potatoes, drizzling any remaining juices from the pan on top. Garnish with fresh herbs if desired.

Notes

Substitute sweet potatoes for a healthier option or use chickpeas/tofu for a vegetarian version. Ensure not to overcrowd the baking sheet for crispy potatoes.
