Preparation
- Cut the chicken breasts into bite-sized pieces and set aside.
- Sprinkle the chicken pieces with salt and pepper.
Cooking
- In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, toss in the broccoli florets and sauté for about 3-4 minutes until bright green and slightly tender. Remove and set aside.
- In the same skillet, add another tablespoon of olive oil. Once heated, add the seasoned chicken pieces. Cook for about 5-7 minutes or until golden brown on all sides.
- Add minced garlic and stir for about 30 seconds until fragrant, being careful not to burn it.
- Return broccoli to the skillet and pour in chicken broth and soy sauce. Stir well to combine and let simmer for another 3-4 minutes.
Serving
- Serve your Chicken and Broccoli warm over steamed rice or quinoa.
Notes
Substitutions include using green beans or snap peas instead of broccoli, or tofu for a vegetarian version. Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or in a skillet with a splash of liquid for best texture.
