  • 2 pieces boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 1 tablespoon soy sauce

Method
 

Preparation
  1. Cut the chicken breasts into bite-sized pieces and set aside.
  2. Sprinkle the chicken pieces with salt and pepper.
Cooking
  1. In a large skillet over medium heat, add 1 tablespoon of olive oil. Once hot, toss in the broccoli florets and sauté for about 3-4 minutes until bright green and slightly tender. Remove and set aside.
  2. In the same skillet, add another tablespoon of olive oil. Once heated, add the seasoned chicken pieces. Cook for about 5-7 minutes or until golden brown on all sides.
  3. Add minced garlic and stir for about 30 seconds until fragrant, being careful not to burn it.
  4. Return broccoli to the skillet and pour in chicken broth and soy sauce. Stir well to combine and let simmer for another 3-4 minutes.
Serving
  1. Serve your Chicken and Broccoli warm over steamed rice or quinoa.

Notes

Substitutions include using green beans or snap peas instead of broccoli, or tofu for a vegetarian version. Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or in a skillet with a splash of liquid for best texture.
