  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter, pumpkin puree, brown sugar, and granulated sugar. Mix on medium speed until smooth and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  5. Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
  6. Scoop rounded tablespoons of dough onto a parchment-lined baking sheet, leaving space between each dollop.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Use fresh pumpkin for robust flavor. Chill the dough for about 30 minutes before baking for better shape retention. The cookies may seem soft when removed from the oven but will firm up as they cool.
