Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
- Mix in the pumpkin puree, egg, and vanilla extract until well combined.
- In another bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing.
- Gently fold in the chocolate chips.
Baking
- Using a cookie scoop or tablespoon, drop dollops of dough onto a lined baking tray, spacing them apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are set but the centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a healthier twist, substitute half of the all-purpose flour with whole wheat flour. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
