  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Mix in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing.
  6. Gently fold in the chocolate chips.
Baking
  1. Using a cookie scoop or tablespoon, drop dollops of dough onto a lined baking tray, spacing them apart.
  2. Bake in the preheated oven for 12-15 minutes or until the edges are set but the centers remain soft.
  3. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For a healthier twist, substitute half of the all-purpose flour with whole wheat flour. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
