Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- In a separate bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until combined.
- Gradually add the dry flour mixture to the wet ingredients, mixing just until combined.
- Fold in the maple syrup until the dough is thick and slightly sticky.
- Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet, leaving space between each cookie.
Baking
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden and the centers look set.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to a week. For longer storage, freeze for up to three months.
