  • 2 pieces ripe bananas, mashed Make sure they are well-ripened for sweetness.
  • 1 cup rolled oats
  • 1/4 cup peanut butter or almond butter Can substitute with any preferred nut butter.
  • 1/4 cup honey or maple syrup Honey can be replaced with maple syrup.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon For flavor.
  • 1 pinch salt
Optional Add-Ins
  • 1 cup chocolate chips, nuts, or dried fruits Feel free to mix and match based on preference.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, mash the ripe bananas until smooth, leaving some small chunks for texture.
Mixing
  1. Add peanut or almond butter, honey (or maple syrup), and vanilla extract to the mashed bananas, mixing until well combined.
  2. In another bowl, combine rolled oats, baking powder, cinnamon, and a pinch of salt, stirring to mix.
  3. Gradually add the dry mixture to the wet mixture, stirring until just combined; fold in any optional add-ins.
Baking
  1. Use a spoon or cookie scoop to drop dollops of dough onto the prepared baking sheet, leaving space in between.
  2. Bake for 10-12 minutes or until golden brown.
  3. Remove from the oven and let cool for a few minutes before transferring to a wire rack.

Notes

For storage, keep in an airtight container at room temperature for up to 3 days or freeze for up to 2 months. To enjoy frozen cookies, let them come to room temperature or warm them in the microwave for 10-15 seconds.
