Preparation
- Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour and granulated sugar, ensuring there are no lumps.
- In a separate bowl, whisk together the egg whites, almond extract, and vanilla extract.
- Gradually add the wet mixture to the dry ingredients, stirring until a sticky dough forms.
- Using your hands, form small balls of dough (about the size of a tablespoon) and roll them in powdered sugar to coat.
Baking
- Place the cookies on the prepared baking sheet, leaving space between each.
- Bake for 15-18 minutes, or until the tops are lightly cracked.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
