  • 2 cups cherry tomatoes, halved
  • 1 cup cheese (e.g., mozzarella or goat cheese), crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh basil, chopped
  • 1 egg for egg wash

Preparation
  1. Preheat the Oven: Set your oven to 400°F (200°C) to ensure it’s hot and ready.
  2. Prepare the Puff Pastry: Roll out your sheet of puff pastry on a lightly floured surface until it’s about 1/8 inch thick. Transfer it to a baking sheet lined with parchment paper.
  3. Toss the Tomatoes: In a bowl, mix the halved cherry tomatoes with olive oil, salt, and pepper. Let the tomatoes sit for about 10 minutes to absorb the flavors.
  4. Layer the Filling: Sprinkle the crumbled cheese evenly over the center of the pastry, leaving about a 2-inch border. Top it with the seasoned cherry tomatoes.
  5. Fold the Edges: Carefully fold the edges of the pastry over the filling while leaving the center exposed.
  6. Add Egg Wash: Beat the egg and brush it over the folded pastry edges for a beautiful golden color once baked.
  7. Bake: Place the galette in the preheated oven and bake for 25-30 minutes or until the pastry is golden brown and crispy.
  8. Garnish and Serve: Sprinkle fresh basil on top before cutting into it. Serve warm!

Notes

Keep the puff pastry cold until ready to use for a flaky texture. Substitute cheeses or add herbs to enhance flavor. Store leftovers in an airtight container for up to 3 days, or freeze individual slices for up to a month. Reheat in the oven at 350°F for 10-15 minutes.
