Ingredients
  

For the Cherry Filling
  • 2 cups fresh or frozen cherries, pitted
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
For the Crust and Crumble Topping
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar Can substitute with granulated sugar mixed with molasses, if necessary.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or line it with parchment paper.
  2. In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently and set aside.
  3. In another bowl, whisk together the flour, oats, baking powder, and salt. Add the softened butter and brown sugar, mixing until crumbly.
  4. Press half of the crumb mixture into the bottom of the prepared baking dish. Spread the cherry filling over it and top with the remaining crumb mixture.
Baking
  1. Bake for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
  2. Allow the bars to cool in the baking dish for at least 20 minutes before cutting into squares.
  3. Enjoy warm or let cool completely before serving with tea.

Notes

For best flavor, use fresh cherries. You can also mix in blueberries or raspberries for a fun variation. Ensure to cool properly for better slicing.
