Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or line it with parchment paper.
- In a mixing bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently and set aside.
- In another bowl, whisk together the flour, oats, baking powder, and salt. Add the softened butter and brown sugar, mixing until crumbly.
- Press half of the crumb mixture into the bottom of the prepared baking dish. Spread the cherry filling over it and top with the remaining crumb mixture.
Baking
- Bake for 30-35 minutes, or until the top is golden brown and the filling is bubbly.
- Allow the bars to cool in the baking dish for at least 20 minutes before cutting into squares.
- Enjoy warm or let cool completely before serving with tea.
Notes
For best flavor, use fresh cherries. You can also mix in blueberries or raspberries for a fun variation. Ensure to cool properly for better slicing.
