Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter (softened) Ensure it's at room temperature for better mixing.
  • 1 cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs Room temperature preferred.
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
For the Cheesecake Filling
  • 1 cup cream cheese (softened) Ensure it's at room temperature.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
For the Cherry Filling
  • 1 cup cherry pie filling

Method
 

Preparation
  1. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add in the eggs and vanilla extract, mixing well.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this mixture to the wet ingredients until well blended.
  4. In another bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
Baking
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Scoop a tablespoon of cookie dough and flatten it in your palm.
  3. Place about a teaspoon of cheesecake filling in the center, followed by a spoonful of cherry pie filling.
  4. Encase the filling with the cookie dough and roll it into a ball. Place on the baking sheet.
  5. Bake for about 12-15 minutes or until the cookies are lightly golden at the edges but still soft in the center.
  6. Allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be paired with cold milk, coffee, whipped cream, or ice cream for an indulgent experience. Store in an airtight container for up to five days or freeze for up to three months.
