  • 1 cup cherries, pitted and chopped Use fresh cherries for the best flavor.
  • 1/2 cup almond flour Can substitute with gluten-free all-purpose flour, though it will alter the flavor slightly.
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup butter, softened
  • 2 pieces eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan with butter or line it with parchment paper.
  3. In a mixing bowl, combine almond flour, all-purpose flour, baking powder, baking soda, and salt. Set aside.
  4. In another bowl, beat the softened butter and sugar together until light and fluffy, about 2-3 minutes.
  5. Mix in the eggs and vanilla extract until completely combined.
  6. Gradually add the dry ingredient mixture to the butter-sugar mixture. Gently mix until just combined.
  7. Carefully fold in the chopped cherries until evenly distributed.
  8. Pour the batter into your prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once done, remove from the oven and let it cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  3. Slice and enjoy!

Notes

Wrap tightly in plastic wrap or aluminum foil and store at room temperature for up to 3 days, or refrigerate for up to a week. Freeze individual slices for up to 3 months.
