  • 2 cups grated zucchini Squeeze out excess moisture
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs

  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Preparation
  1. Preheat your oven to 425°F (220°C) and prepare a baking tray with cooking spray or a light coat of oil.
  2. Grate 2 cups of zucchini and place it in a clean kitchen towel. Squeeze out excess moisture.
Mixing
  1. In a large mixing bowl, combine the grated zucchini, shredded mozzarella cheese, grated Parmesan cheese, all-purpose flour, eggs, garlic powder, salt, black pepper, and dried oregano. Mix until well combined.
  2. Spread the mixture evenly on the prepared baking tray, shaping it into a rectangle, approximately 1/2 inch thick.
Baking
  1. Place the tray in the preheated oven and bake for about 25 minutes until the breadsticks are golden brown and crispy.
Serving
  1. Once out of the oven, let it cool for a few minutes. Slice into sticks and serve warm—perfect for dipping in marinara sauce or enjoying solo!

Notes

For best results, use medium-sized zucchini to avoid excess moisture. You can experiment with different cheeses for variety.
