  • 2 cups vegetable broth (or water)
  • 1 packet taco seasoning mix or homemade, if preferred
  • 1 cup canned black beans (rinsed and drained)
  • 1 cup corn fresh, canned, or frozen
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • to taste diced tomatoes, jalapeƱos, or bell peppers Optional toppings for added flavor

Method
 

Cooking the Rice
  1. In a medium saucepan, bring the vegetable broth to a boil. Add the uncooked rice, cover, and reduce to a simmer. Cook according to package instructions until the rice is fluffy and has fully absorbed the liquid (about 15-20 minutes).
Seasoning and Mixing
  1. Once cooked, stir in the taco seasoning mix to infuse the rice with classic taco flavor.
  2. Fold in the black beans and corn, and if desired, add diced tomatoes or bell peppers for color and extra nutrition.
  3. Sprinkle the shredded cheese over the top and mix gently until it's melted and well incorporated throughout the rice.
Serving
  1. Scoop the Cheesy Taco Rice into bowls, add your choice of toppings, and serve hot.

Notes

Substitute taco seasoning with homemade mix using chili powder, cumin, garlic powder, and paprika. For added spice, incorporate chopped jalapeƱos or crushed red pepper flakes during cooking. Let rice sit covered for a few minutes post-cooking for fluffiness. Store leftovers in an airtight container for 3-4 days and reheat with a splash of broth or water.
