Cheesy Taco Potatoes

Ingredients
  

For the Potatoes
  • 4 large large potatoes Wash thoroughly and poke holes with a fork.
For the Filling
  • 1 cup shredded cheddar cheese Use more or less according to taste.
  • 1 cup cooked ground beef (Halal) Brown in a skillet and drain excess fat.
  • 1 packet taco seasoning (make sure it’s Halal-friendly) Combine with a splash of water.
For Toppings
  • 1/2 cup sour cream Top each potato before serving.
  • 1/2 cup diced tomatoes Fresh or canned, as per availability.
  • 1/4 cup green onions, chopped Fresh, for garnishing.
  • to taste Salt and pepper Season to preference.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and poke holes in them using a fork to allow steam to escape while they bake.
Baking the Potatoes
  1. Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, or until tender.
Cooking the Beef
  1. While the potatoes are baking, brown the ground beef in a skillet over medium heat.
  2. Once cooked, drain any excess fat.
  3. Stir in the taco seasoning and a splash of water, mixing until well combined. Cook for a few more minutes.
Assembling the Potatoes
  1. Slice the baked potatoes in half lengthwise and scoop out a bit of the insides.
  2. Spoon the taco meat mixture into each potato skin and top generously with shredded cheddar cheese.
Final Baking
  1. Return the loaded potatoes to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbling.
Serving
  1. Remove from the oven and let cool slightly. Top each potato with sour cream, diced tomatoes, and chopped green onions. Season with salt and pepper to taste.

Notes

For vegetarian versions, substitute ground beef with lentils or black beans. Store leftovers in an airtight container for up to 3 days or freeze for up to a month.
