  • 4 large large eggs
  • 1 cup cheddar cheese, shredded (or your favorite cheese)
  • 1 cup cooked sausage or turkey sausage, cbled (make sure it’s a favorite!)
  • 4 large flour tortillas
  • to taste Salt and pepper
  • Cooking spray or olive oil (for cooking)

Preparation
  1. Start by cracking the eggs into a bowl. Whisk them until well combined. Season with a pinch of salt and pepper.
  2. In a skillet over medium heat, add your cooked sausage, breaking it apart further if necessary. Sauté for a minute or two until heated through and slightly crispy.
  3. Push the sausage to one side of the skillet. Pour the whisked eggs into the other side. Allow them to cook for a minute before gently stirring, mixing them with the sausage. Cook until the eggs are fully set, about 3–5 minutes.
  4. Once the eggs are cooked to your liking, sprinkle shredded cheese over the mixture. Let it melt for a minute.
  5. Take a flour tortilla and add a generous scoop of the cheesy sausage and egg mixture in the center. Fold the sides over and then roll from the bottom up to create a wrap.
  6. In the same skillet, add a bit of oil if necessary. Place the wrap seam-side down, cooking for 2-3 minutes on each side until golden brown and crispy.
  7. Slice the wrap in half, serve warm, and enjoy your delicious breakfast!

Notes

Serve with fresh fruit, hash browns, salsa, or hot sauce. A glass of freshly squeezed orange juice or a smoothie pairs well for a complete breakfast experience.
