Preparation
- Start by cracking the eggs into a bowl. Whisk them until well combined. Season with a pinch of salt and pepper.
- In a skillet over medium heat, add your cooked sausage, breaking it apart further if necessary. Sauté for a minute or two until heated through and slightly crispy.
- Push the sausage to one side of the skillet. Pour the whisked eggs into the other side. Allow them to cook for a minute before gently stirring, mixing them with the sausage. Cook until the eggs are fully set, about 3–5 minutes.
- Once the eggs are cooked to your liking, sprinkle shredded cheese over the mixture. Let it melt for a minute.
- Take a flour tortilla and add a generous scoop of the cheesy sausage and egg mixture in the center. Fold the sides over and then roll from the bottom up to create a wrap.
- In the same skillet, add a bit of oil if necessary. Place the wrap seam-side down, cooking for 2-3 minutes on each side until golden brown and crispy.
- Slice the wrap in half, serve warm, and enjoy your delicious breakfast!
Notes
Serve with fresh fruit, hash browns, salsa, or hot sauce. A glass of freshly squeezed orange juice or a smoothie pairs well for a complete breakfast experience.
