  • 1 pound breakfast sausage or your favorite sausage
  • 6 large eggs
  • 2 cups shredded cheese cheddar, mozzarella, or a blend
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 4 cups cubed bread any bread type you prefer
  • to taste Optional: diced bell peppers, spinach, or green onions for added flavor

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the breakfast sausage until browned. Break it apart with a spatula for even cooking. Once cooked, remove from heat and set aside.
  3. In a separate bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until combined.
  4. In a large mixing bowl, combine the cooked sausage, cubed bread, and half of the shredded cheese. Pour in the egg mixture and stir until everything is well coated.
  5. Grease a 9×13-inch baking dish and pour the mixture into the dish. Spread it evenly and top with the remaining shredded cheese.
Baking
  1. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set and golden on top.

Notes

You can swap out the sausage for turkey sausage or a plant-based option. This casserole can be assembled the night before and baked fresh in the morning. Check for doneness by inserting a toothpick in the center; it should come out clean. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the microwave or oven covered with aluminum foil to keep it moist.
