Preparation
- Pat the chicken breasts dry with a paper towel and season them with salt and pepper on both sides.
- In a large, oven-safe skillet, heat the olive oil over medium heat.
Cooking
- Once hot, add the chicken breasts and sear them for about 5-6 minutes on each side until golden brown.
- During the last minute of searing, sprinkle the minced garlic into the skillet and stir to prevent burning.
- Pour the balsamic vinegar over the chicken, ensuring each piece is well-coated.
- Generously sprinkle the mozzarella cheese on top of the chicken.
- Transfer the skillet to an oven preheated to 375°F (190°C) and bake for about 20 minutes, or until the chicken is cooked through and the cheese is bubbly.
- Remove from the oven and let rest for a few minutes before garnishing with fresh basil.
Notes
Chicken thighs can be used for a juicer alternative. Add Italian seasoning or red pepper flakes for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven or microwave.
