  • 4 pieces chicken breasts Boneless and skinless
  • 1/2 cup balsamic vinegar
  • 1 cup mozzarella cheese, shredded For topping
  • 1 tablespoon olive oil For searing
  • 3 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh basil, for garnish Chopped or whole leaves

Method
 

Preparation
  1. Pat the chicken breasts dry with a paper towel and season them with salt and pepper on both sides.
  2. In a large, oven-safe skillet, heat the olive oil over medium heat.
Cooking
  1. Once hot, add the chicken breasts and sear them for about 5-6 minutes on each side until golden brown.
  2. During the last minute of searing, sprinkle the minced garlic into the skillet and stir to prevent burning.
  3. Pour the balsamic vinegar over the chicken, ensuring each piece is well-coated.
  4. Generously sprinkle the mozzarella cheese on top of the chicken.
  5. Transfer the skillet to an oven preheated to 375°F (190°C) and bake for about 20 minutes, or until the chicken is cooked through and the cheese is bubbly.
  6. Remove from the oven and let rest for a few minutes before garnishing with fresh basil.

Notes

Chicken thighs can be used for a juicer alternative. Add Italian seasoning or red pepper flakes for extra flavor. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven or microwave.
