Preparation
  1. Begin by preheating your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the frozen hash browns, sour cream, shredded cheddar cheese, shredded mozzarella cheese, chopped onion, melted butter, salt, and pepper. Stir well until all ingredients are evenly mixed.
  3. Grease a 9x13 inch baking dish with cooking spray or a touch of butter to prevent sticking.
  4. Pour the hash brown mixture into the prepared dish. Spread it out evenly, pressing down slightly to ensure it’s compact.
Baking
  1. Place in the preheated oven and bake for 45-50 minutes or until the top is golden brown and bubbly.
  2. Allow the casserole to cool for about 10 minutes before serving. This will help it set, making it easier to cut into squares.

Notes

Feel free to swap out the cheeses to your liking. Allow the casserole to achieve a golden-brown color on top for the best flavor. Avoid overmixing the ingredients to prevent mushy hash browns. Leftovers can be stored in the refrigerator for up to 3 days; reheat at 350°F until warmed through.
