Cooking Pasta and Sautéing
- Begin by boiling water in a large pot. Add salt and the spaghetti, cooking until al dente as per package instructions. Reserve ½ cup of pasta water before draining.
- In a large skillet over medium heat, add the olive oil. Once it’s warm, throw in the minced garlic and sauté until fragrant, about 1-2 minutes. Be cautious not to burn it!
Making the Sauce
- To your skillet, add the cream cheese and let it melt. Gradually mix in the reserved pasta water to reach a smooth consistency.
- Stir in the grated Parmesan cheese until melted and creamy. Adjust there’s enough salt and pepper to meet your taste.
Combining and Serving
- Add the drained spaghetti to the skillet, tossing well so every strand is coated with the cheesy sauce. Add more pasta water if needed to achieve your desired creaminess.
- Plate up the spaghetti, and if desired, sprinkle fresh parsley on top for a lovely finish.

Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on low on the stovetop, adding a splash of water if necessary to bring back that creamy texture. Customize with veggies like spinach or mushrooms for added flavor and nutrients.
