Method
 

Cooking Pasta and Sautéing
  1. Begin by boiling water in a large pot. Add salt and the spaghetti, cooking until al dente as per package instructions. Reserve ½ cup of pasta water before draining.
  2. In a large skillet over medium heat, add the olive oil. Once it’s warm, throw in the minced garlic and sauté until fragrant, about 1-2 minutes. Be cautious not to burn it!
Making the Sauce
  1. To your skillet, add the cream cheese and let it melt. Gradually mix in the reserved pasta water to reach a smooth consistency.
  2. Stir in the grated Parmesan cheese until melted and creamy. Adjust there’s enough salt and pepper to meet your taste.
Combining and Serving
  1. Add the drained spaghetti to the skillet, tossing well so every strand is coated with the cheesy sauce. Add more pasta water if needed to achieve your desired creaminess.
  2. Plate up the spaghetti, and if desired, sprinkle fresh parsley on top for a lovely finish.
  3. Dig in and relish the cheesy goodness!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on low on the stovetop, adding a splash of water if necessary to bring back that creamy texture. Customize with veggies like spinach or mushrooms for added flavor and nutrients.
