Ingredients
  

Main Ingredients
  • 1 lb ground beef (Halal)
  • 4 cups diced potatoes
  • 1 cup chopped onion
  • 3 cups beef broth (Halal)
  • 1 cup shredded cheddar cheese
  • 1 can cream of mushroom soup (ensure Halal compliant)
  • Salt and pepper to taste

  • Sour cream for garnish
  • Green onions for garnish

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until it’s completely cooked. Drain any excess fat, if necessary.
  2. While the beef is cooking, peel and dice your potatoes. Chop the onion into small pieces.
Cooking
  1. In your crockpot, combine the browned beef, diced potatoes, chopped onion, beef broth, cream of mushroom soup, salt, and pepper. Stir everything to ensure an even distribution.
  2. Cover the crock pot and set it to cook on low for 6-8 hours or high for 3-4 hours, until the potatoes are tender.
  3. About 30 minutes before serving, stir in the shredded cheddar cheese until melted.
Serving
  1. Ladle the soup into bowls and garnish with sour cream and green onions if desired. Enjoy!

Notes

For substitutions, add carrots or peas towards the last hour of cooking. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze portions for up to 3 months.
