  1. In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
  2. Add the cottage cheese and olive oil. Mix until you have a soft dough.
  3. On a lightly floured surface, knead the dough gently for about 2 minutes until smooth.
  4. Divide your dough into equal portions (about four). Roll each portion into a circle about ¼ inch thick.
Cooking
  1. Heat a non-stick skillet over medium heat. Place the rolled-out dough in the skillet.
  2. Cook for about 2-3 minutes on each side, until golden brown.
  3. Once cooked, spread a layer of shredded cheese on top of the flatbread and cook for another minute until the cheese melts.
Serving
  1. Remove from the skillet, add your favorite toppings if desired, slice, and serve hot.

Notes

For gluten-free options, substitute with almond or coconut flour while adjusting liquids. Store leftovers in an airtight container for up to 3 days or freeze with parchment layers.
