Preparation
- In a mixing bowl, combine the all-purpose flour, baking powder, and salt.
- Add the cottage cheese and olive oil. Mix until you have a soft dough.
- On a lightly floured surface, knead the dough gently for about 2 minutes until smooth.
- Divide your dough into equal portions (about four). Roll each portion into a circle about ¼ inch thick.
Cooking
- Heat a non-stick skillet over medium heat. Place the rolled-out dough in the skillet.
- Cook for about 2-3 minutes on each side, until golden brown.
- Once cooked, spread a layer of shredded cheese on top of the flatbread and cook for another minute until the cheese melts.
Serving
- Remove from the skillet, add your favorite toppings if desired, slice, and serve hot.
Notes
For gluten-free options, substitute with almond or coconut flour while adjusting liquids. Store leftovers in an airtight container for up to 3 days or freeze with parchment layers.
