Ingredients
  

Main Ingredients
  • 1 head head of cauliflower
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup breadcrumbs Can use gluten-free breadcrumbs for a gluten-free option.
  • 2 large eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Break the cauliflower into small florets and steam them until tender, about 5-7 minutes.
  3. In a large bowl, mash the steamed cauliflower with a fork or potato masher until smooth.
  4. Add the shredded cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper to the bowl. Stir until everything is combined.
  5. Form small balls about the size of a ping-pong ball and place them on a lined baking sheet, leaving space between each.
Cooking
  1. Bake for 20-25 minutes or until golden brown and crispy.
  2. Allow to cool slightly before serving warm with your favorite dipping sauces.

Notes

For dairy-free options, use vegan cheese alternatives. The bites can be refrigerated before baking if prepared ahead.
