Preparation
- Preheat your oven to 425°F (220°C).
- Break the cauliflower into small florets and steam them until tender, about 5-7 minutes.
- In a large bowl, mash the steamed cauliflower with a fork or potato masher until smooth.
- Add the shredded cheese, breadcrumbs, eggs, garlic powder, onion powder, salt, and pepper to the bowl. Stir until everything is combined.
- Form small balls about the size of a ping-pong ball and place them on a lined baking sheet, leaving space between each.
Cooking
- Bake for 20-25 minutes or until golden brown and crispy.
- Allow to cool slightly before serving warm with your favorite dipping sauces.

For dairy-free options, use vegan cheese alternatives. The bites can be refrigerated before baking if prepared ahead.
