  • 2 cups cooked chicken, shredded Can substitute with turkey or vegetarian protein.
  • 2 cups broccoli florets, steamed Frozen broccoli can also be used; blanch first.
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese Reserve some for topping if desired.
  • 1 can cream of chicken soup Use vegetable cream soup for a vegetarian version.
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs Optional for topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13-inch baking dish.
  3. In a large mixing bowl, combine the cooked chicken, steamed broccoli florets, and cooked rice.
  4. In another bowl, whisk together the cream of chicken soup, milk, garlic powder, salt, and pepper until fully blended. Pour this mixture over the chicken, broccoli, and rice, then stir until well coated.
  5. Fold in the shredded cheddar cheese, reserving some for the topping.
  6. Spread the mixture evenly in the prepared baking dish.
  7. If using, sprinkle breadcrumbs evenly across the top.
  8. Bake for about 25-30 minutes, or until bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

Leftovers can be refrigerated for 3-4 days and reheated in the microwave or oven. Freeze before baking for up to three months.
