Ingredients
  

Base Ingredients
  • 2 cups cooked chicken, shredded or diced Can also use turkey or plant-based protein
  • 2 cups cooked rice (white or brown)
  • 2 cups broccoli florets (fresh or frozen) Avoid overcooking; lightly blanch for best texture.
  • 1 cup shredded cheddar cheese Plus more for topping
  • 1 can condensed cream of chicken soup (10.5 oz) Look for Halal-certified brands
  • 1 cup chicken broth Halal
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional) For a crispy topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, broccoli florets, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Pour the mixture into a greased 9x13 inch casserole dish and spread it evenly.
  4. Sprinkle 1 cup of shredded cheddar cheese over the top. Add more cheese if desired.
  5. If you like a crunchy topping, sprinkle breadcrumbs on top of the cheese layer.
Cooking
  1. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until bubbly and golden on top.
  2. Remove from the oven, allow to cool for a few minutes, then serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for 2-3 months. Reheat in the oven or microwave, covering to maintain moisture.
