Preparation
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium saucepan over medium heat, combine the milk and vegetable oil, stirring until it’s just about to boil. Remove from heat.
- In a large bowl, combine the tapioca flour and salt.
- Pour the hot milk mixture into the dry ingredients. Stir until well-combined.
- Allow the mixture to cool slightly, then add the eggs one at a time, mixing until fully incorporated.
- Fold in the grated cheese gently, ensuring it’s evenly distributed.
- Using your hands, form small balls (about the size of a golf ball) and place them on the prepared baking sheet.
Baking
- Bake in the preheated oven for 15-20 minutes or until golden brown.
Serving
- Let them cool just slightly, then enjoy warm and cheesy!
Notes
Keep an eye on them as they bake; you want that golden brown crust without drying out the inside. If you have leftovers, refrigerate in an airtight container for up to 3 days; freeze for up to a month. Reheat in the oven at 350°F (175°C) for about 10-15 minutes to maintain gooeyness.
