  • 2 cups tapioca flour
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup grated cheese (such as mozzarella or Parmesan) Feel free to use Halal cheese options!
  • 1 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine the milk and vegetable oil, stirring until it’s just about to boil. Remove from heat.
  3. In a large bowl, combine the tapioca flour and salt.
  4. Pour the hot milk mixture into the dry ingredients. Stir until well-combined.
  5. Allow the mixture to cool slightly, then add the eggs one at a time, mixing until fully incorporated.
  6. Fold in the grated cheese gently, ensuring it’s evenly distributed.
  7. Using your hands, form small balls (about the size of a golf ball) and place them on the prepared baking sheet.
Baking
  1. Bake in the preheated oven for 15-20 minutes or until golden brown.
Serving
  1. Let them cool just slightly, then enjoy warm and cheesy!

Notes

Keep an eye on them as they bake; you want that golden brown crust without drying out the inside. If you have leftovers, refrigerate in an airtight container for up to 3 days; freeze for up to a month. Reheat in the oven at 350°F (175°C) for about 10-15 minutes to maintain gooeyness.
