Ingredients
  

For the cheesecake filling
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 cup crushed gra crackers
  • 1/4 cup chopped nuts (optional: walnuts or pecans work well)
  • 1/4 cup sour cream (optional for added richness)
For the baked apples
  • 4 medium apples (Granny Smith or Honeycrisp work wonderfully)
  • 2 tablespoons butter, for greasing and drizzling

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare a baking dish by greasing it lightly with butter.
  2. Gently wash and core the apples, leaving the bottom intact to hold the filling.
  3. In a medium bowl, combine the softened cream cheese, sugar, vanilla extract, and cinnamon. Beat until smooth and creamy.
  4. Stir in the crushed gra crackers and chopped nuts (if using) into the cheesecake mixture.
Assembly
  1. Generously fill each cored apple with the cheesecake filling, packing it down gently.
Baking
  1. Place the filled apples in the greased baking dish and drizzle a little melted butter over the top of each apple.
  2. Bake for 25-30 minutes, or until the apples are tender but still hold their shape.
Serving
  1. Let the apples cool for a few minutes before serving, optionally topped with whipped cream or a scoop of vanilla ice cream.

Notes

Choose apples that can hold their shape while baking. Customize the filling with chocolate chips or lemon zest for variations. Store leftovers in an airtight container for 3-5 days. Reheat in the oven at 350°F for 10-15 minutes.
