Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Ensure butter is at room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips Milk or dark chocolate based on preference
For the Cheesecake Filling
  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg yolk

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a medium bowl, mix the softened cream cheese, 1/4 cup granulated sugar, 1/2 teaspoon of vanilla extract, and the egg yolk until smooth and creamy. Set aside.
  3. In a large mixing bowl, cream together the softened butter, 3/4 cup granulated sugar, and brown sugar until light and fluffy.
  4. Add in the egg and 1 teaspoon of vanilla extract, mixing until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
Assembling and Baking
  1. Scoop a tablespoon of cookie dough, create a small indent in the center, and spoon a dollop of the cheesecake filling inside. Encase the filling with more cookie dough, rolling it into a ball, and place it on the baking sheet.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are just golden.
  3. Remove from the oven and allow them to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

For the best cookies, use room temperature ingredients, avoid overmixing the dough, and consider chilling the dough for thicker cookies. You can also experiment with different types of chocolate chips.
